PfB is led by Professor Poul Erik Jensen and consists of 3 associate Professors, 1 assistant Professor, 2 postdocs and 4 PhD fellows. The focus of the group is on generating knowledge about food components and their interactions, with emphasis on plants, microalgae, fungi, and side streams. Core activities include molecular and structural characterization of proteins, studying their interactions in the food matrix, and linking protein composition to functionality and food quality to guide future food biotechnology strategies.
