Position Overview

We are looking for an experienced and committed Manager with strong chef experience to lead and further develop Havnsø Fisk. This is a hands-on role, where the manager is personally responsible for daily cooking and kitchen work alongside overall management duties. Kitchen presence and practical culinary skills are essential.

The manager will work closely with another employee dedicated to the fish market, making collaboration, coordination and teamwork a key part of the role.

Key Responsibilities

• Daily hands-on cooking and food preparation

• Active presence in the kitchen during service

• Ensuring efficient kitchen operations and high culinary standards

• Leading by example through practical kitchen work

Restaurant Operations

• Managing daily restaurant operations

• Menu planning and execution

• Coordinating kitchen and service activities

Fish Market Collaboration

• Overall responsibility for fish market operations

• Close collaboration with a separately employed fish market staff member

• Ensuring smooth coordination between kitchen, market and service

Menu Development

• Developing innovative, high-quality fish and seafood dishes

• Using seasonal ingredients and maintaining a strong culinary identity

Quality & Food Safety

• Ensuring consistently high product quality

• Compliance with food safety and hygiene regulations

Staff Leadership & Development

• Recruiting, training and motivating employees

• Creating a positive, professional and collaborative working environment

Customer Experience

• Building strong relationships with guests and customers

• Ensuring a welcoming and service-oriented atmosphere

Qualifications

• Proven experience as a manager within the food or hospitality industry

• Strong chef background with solid, practical kitchen experience

• Ability and willingness to perform daily hands-on cooking

• Strong leadership and organisational skills

• Team-oriented mindset and strong collaboration skills

• Ability to work independently and take responsibility

• Knowledge of sustainable food practices is an advantage

• Good communication skills in English (Danish is an advantage but not required)
